ingredients
For the Mochi
- 130ml NutriSoy Fresh Soya Milk with Real Oats & Quinoa
- 10g Caster Sugar
- 70g glutinous rice flour
- 20g cornstarch
- 10g unsalted butter
For the Cookie Dough
- 100g unsalted butter
- 75g caster sugar
- 1 egg
- 180g all purpose flour / top flour
- 15g matcha powder
- 2g baking powder
- pinch of salt
- Chocolate chips
STEP
- First, mix all mochi ingredients except butter and steam.
- Add butter to mix and chill in the fridge.
- Mix cookie dough as per video and chill in the fridge for an hour.
- Weigh cookie dough and wrap mochi in it.
- Add chocolate chips and bake in a preheated oven at 180C for 12-14 mins
