ingredients

FRENCH TOAST

  1. 1 loaf crusty bread – sourdough, nut loaf or baguette in slices
  2. 1 cup Nutrisoy Fresh Soya Milk with real Oat and Quinoa Reduced Sugar
  3. ¼ cup cornstarch
  4. ½ tsp baking powder
  5. ½ tsp cinnamon
  6. 1 tsp maple syrup
  7. 1 tsp vanilla essence
  8. 1 tbsp brown sugar
  9. ½ tsp fine salt

SALTED CARAMEL SAUCE

  1. ¼ cup coconut oil, cold-pressed
  2. 100ml Nutrisoy Fresh Soya Milk with real Oat and Quinoa Reduced Sugar
  3. ¾ tsp fine salt
  4. 3 tbsp water
  5. 1 cup brown sugar
  6. 1/8 tsp cream of tartar

GARNISH

  1. Blueberries
  2. Strawberries, sliced
  3. Banana, sliced
  4. Icing sugar

STEP

  1. Begin by making your vegan salted caramel sauce. Combine 3 tbsp water, brown sugar and cream of tartar in a small pot and bring to a simmer. Cook for 3-4 minutes, being careful not to burn the sugar. You want a roasted caramel fragrance, but not bitter notes.
  2. Add in coconut oil and stir carefully as mix may spatter slightly. Continue to heat and whisk.
  3. Add in Nutrisoy Fresh Soya Milk and cook for a further 5 minutes until slightly thickened. The sauce will continue to thicken as it cools, so a good test is to take a teaspoon of the sauce and place on a metal tray to cool quickly. Once the sauce is sticky but still flows, you may remove it from heat and stir in your salt. Set sauce aside
  4. To make your French toast mix, combine Nutrisoy Fresh Soya Milk, cornstarch, baking powder, cinnamon, maple syrup, sugar and vanilla essence. Whisk well, then add slices of bread in the mix to absorb the liquid. If you prefer a firmer, dryer French toast texture, soak bread slices for shorter amounts of time to prevent them from becoming soggy.
  5. In a preheated non-stick frying pan on medium heat, fry each slice of coated bread with a small amount of cooking oil or cooking spray. Cook French toast slices on both sides for 3 mins or until browned and fragrant.
  6. To serve, garnish French toast with blueberries, sliced strawberries and bananas. Top with icing sugar, then drizzle your salted caramel sauce over. Serve warm!
